Slow Cooker Cowboy Casserole

A heartwarming slow cooker casserole featuring seasoned ground beef, potatoes, and a cheesy finish that brings the family together.

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup diced onions
  • 1 cup corn (optional)
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the diced onions over medium heat until fully cooked. Drain off the excess fat.
  2. In your slow cooker, combine the cooked beef and onions with kidney beans, diced potatoes, and cream of mushroom soup. Stir in corn if desired.
  3. Season generously with salt and pepper and mix well. Cover and cook on low for 6 to 8 hours.
  4. About 30 minutes before serving, sprinkle cheddar cheese on top and cover again to allow it to melt.
  5. Serve hot and enjoy with family.

Notes

For extra flavor, add smoked paprika or cayenne pepper to the beef. Use Yukon Gold potatoes for a creamier texture.
