Slow Cooker Unstuffed Cabbage Rolls

  • 1 yellow onion, diced
  • 1 small head green cabbage, chopped
  • 1 14-ounce can petite diced tomatoes
  • 1 6-ounce can tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 teaspoons dried parsley
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1/2 cup water

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until it turns slightly pink, and drain any excess fat.
  2. Add the diced onion, thyme, parsley, salt, and red pepper flakes to the skillet and cook until the onions are tender and fragrant.
  3. Carefully transfer the meat mixture to your slow cooker and layer it generously with the chopped cabbage.
  4. In a mixing bowl, combine the petite diced tomatoes, tomato paste, Worcestershire sauce, and water, stirring until smooth.
  5. Pour this rich sauce over the meat and cabbage in the slow cooker, and stir gently to combine.
  6. Cover and set the slow cooker to low for about 6 to 8 hours, allowing those flavors to meld beautifully.

Notes

For a richer flavor, add a splash of beef broth to the sauce. For extra heat, use more red pepper flakes. Sauté onions until caramelized for sweetness.
