Spicy Potsticker Soup

Warm and comforting Spicy Potsticker Soup loaded with tender dumplings and vibrant veggies, perfect for chilly evenings.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup sliced shiitake mushrooms
  • 2 tablespoons minced fresh ginger
  • 3 cloves garlic, minced
  • 1 bunch green onions, sliced (white and green parts divided)
  • 8 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1/4 cup rice vinegar
  • 2 teaspoons sesame oil
  • 2 teaspoons Sriracha hot sauce
  • 3 cups sliced bok choy
  • 16 frozen potstickers
  • 2 tablespoons miso paste
  • 1 tablespoon chili crisp (optional)

Instructions

  1. Heat vegetable oil in a soup pot over high heat. Add the mushrooms and cook, stirring occasionally, until they start to brown, about 4 minutes.
  2. Stir in ginger, garlic, and the white parts of the sliced green onions, cooking just until fragrant, about 1 minute.
  3. Pour in the broth and bring it to a simmer. Stir in soy sauce, rice vinegar, sesame oil, and Sriracha, making sure all those flavors blend beautifully.
  4. Add bok choy, the green parts of the sliced green onions, and frozen potstickers. Cook, stirring occasionally, until the dumplings are heated through, about 3 to 4 minutes.
  5. Just before the potstickers are hot, mix miso paste with about 1/2 cup of hot broth and stir it into the soup. Turn off the heat and stir in chili crisp. Taste and adjust seasoning as needed, then serve immediately.

Notes

Serve with crusty bread or a light salad, and garnish with extra green onions or sesame seeds.
