Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup chicken broth
  • ½ cup sour cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • 1 tbsp olive oil (optional)
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. If desired, heat the olive oil in a pan over medium heat and sear each chicken breast for 2-3 minutes on both sides until golden brown.
  2. In the crock pot, combine the cream of chicken soup, ranch seasoning, chicken broth, garlic powder, onion powder, and black pepper. Stir until blended.
  3. Place the chicken breasts into the crock pot, coating them in the sauce.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  5. Once done, shred the chicken with two forks in the pot and mix it into the sauce.
  6. Stir in the sour cream, and top with shredded cheese and parsley if desired. Serve over rice, mashed potatoes, or greens.

Notes

For extra flavor, consider adding a splash of fresh lemon juice before serving or using Greek yogurt instead of sour cream.
