Thai Peanut Chicken Wraps

These delicious Thai Peanut Chicken Wraps are packed with protein and crunch, featuring tender chicken, vibrant coleslaw, and a creamy peanut dressing.

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice wine vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)
  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. In a small bowl or measuring cup, whisk together the peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, minced garlic, minced ginger, and sriracha sauce. Thin it with a little water if desired.
  2. In a large bowl, combine the cooked chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Drizzle the peanut dressing over the mixture, tossing to coat evenly.
  3. Let the mixture sit for a few minutes to let the flavors meld.
  4. Microwave the tortillas for about 30 seconds to soften them.
  5. Divide the filling among the tortillas, wrap them up tightly, and serve immediately.

Notes

Feel free to adjust the sriracha for desired spiciness, and consider meal prepping by making the filling in advance.
