Easy & Delicious Tomato Soup with Grilled Cheese

A comforting and rich tomato soup paired with gooey grilled cheese sandwiches, perfect for chilly days.

  • kg (3lbs) Tomatoes
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 red onions, finely chopped
  • 2 garlic cloves, finely chopped
  • ½ cup fresh basil leaves
  • 2 tsp tomato paste
  • 8 cups vegetable or chicken broth
  • ½ cup cream
  • Salt & black pepper to taste
  • Fresh basil (for serving)
  • 2 slices of bread per person
  • 2 cups grated mozzarella
  • 2 cups grated mature cheddar
  • Butter

Instructions

  1. Preheat your oven to 200°C (390°F). In a roasting tray, place the tomatoes and drizzle with balsamic vinegar, olive oil, sugar, and salt. Stir and roast for 25-30 minutes.
  2. In a large pot over medium-high heat, sauté the chopped onions in olive oil until translucent. Add minced garlic and basil and fry for another minute.
  3. Stir in the roasted tomatoes, tomato paste, and sugar. Pour in the broth.
  4. Lower heat, cover, and simmer for 10 minutes.
  5. Blend the soup until smooth, then add the cream and season with salt and pepper.
  6. For the grilled cheese, mix mozzarella and cheddar. Spread cheese on half the bread slices, top with the remaining slices. Butter both sides.
  7. Cook sandwiches in a non-stick pan over medium heat until golden brown, about 3-4 minutes per side.
  8. Serve the soup hot with a swirl of cream and fresh basil, alongside grilled cheese sandwiches.

Notes

For extra flavor, add red pepper flakes when sautéing onions. Experiment with different cheeses for variation.
