Vegetarian Stuffed Bell Peppers

  • 4 bell peppers (any color)
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Sauté the onion and garlic in a skillet until softened.
  4. In a large bowl, combine the cooked rice, black beans, corn, onion, garlic, cumin, paprika, salt, and pepper.
  5. Stuff the bell peppers with the rice mixture.
  6. If desired, sprinkle cheese on top of the stuffed peppers.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly.
  9. Garnish with fresh cilantro before serving.

For added flavor, consider roasting your peppers before stuffing. Feel free to customize the filling with your favorite seasonal vegetables.
