  • 1 cup self-rising flour
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter for a richer flavor)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional for a zesty kick)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the yogurt, sugar, and eggs, stirring until smooth.
  3. Gradually add the self-rising flour, mixing until there are no lumps.
  4. Drizzle in the vegetable oil and vanilla extract, folding gently into the batter.
  5. Pour the batter into a greased cake pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store in the fridge for up to five days or freeze for up to three months. Reheat slices in the microwave for about 20 seconds.
