Scrumptious Egg Muffins

These delightful egg muffins are a quick, versatile breakfast packed with protein and customizable add-ins.

Ingredients

  • 10 large eggs
  • ½ cup cottage cheese
  • ½ tsp salt
  • ¼ tsp black pepper (freshly cracked)
  • 1½ cups chopped or shredded add-ins (bell peppers, spinach, ham, cheese, etc.)

Instructions

  1. Preheat your oven to 375ºF.
  2. Chop or shred your favorite add-ins.
  3. In a non-stick muffin tin, add about 2 tablespoons of chosen add-ins to each well.
  4. In a large blender, blend eggs, cottage cheese, salt, and pepper until smooth.
  5. Pour the egg mixture into each well, filling them nearly to the top.
  6. Bake for about 18 minutes, or until centers are just set and barely golden.
  7. Let cool for a few minutes before loosening muffins with a knife and transferring to a wire rack.

Notes

For a fluffier texture, add a splash of milk to the egg mixture. Freeze well for later use.
