Quark Coins with Oats

  • 100g rolled oats
  • 2 eggs
  • 50g sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter or oil for frying

Instructions

  1. In a big bowl, blend the quark and rolled oats together until creamy.
  2. Add the eggs, sugar, baking powder, vanilla extract, and salt; whisk until combined.
  3. Heat a skillet over medium heat and add butter or oil.
  4. Scoop small portions of the mixture and drop them into the pan to form round cakes.
  5. Cook for 3-4 minutes on each side until golden brown and firm around the edges.
  6. Serve warm, topped with fresh fruits, honey, or Greek yogurt.
