Ingredients
Scale
- 2 cups Tortellini (fresh or frozen)
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 can (14 oz) Diced tomatoes
- 1 cup Heavy cream
- 1 cup Fresh basil, chopped
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add minced garlic and sauté for about 1 minute until fragrant, stirring to prevent burning.
- Stir in the diced tomatoes and let them cook down for 2-3 minutes, blending flavors.
- Add the tortellini and cook according to package instructions, allowing it to soak in the sauce.
- Once the tortellini is tender, reduce the heat and stir in heavy cream and fresh basil, mixing thoroughly.
- Season with salt and pepper to taste; adjust based on preference.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
Best enjoyed fresh. Overcooking the tortellini can lead to a mushy texture. Store leftovers in the fridge for up to 3 days.
