A hearty and flavorful vegetarian dish made with black beans, brown rice, and melted Monterey Jack cheese, perfect for meal prep.

- 1 cup black beans, canned or cooked
- 1 cup brown rice
- 1 can diced tomatoes
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup Monterey Jack cheese, shredded
Instructions
- In a large pot, heat some oil over medium heat until it sizzles.
- Add chopped onion and bell pepper; sauté until soft and translucent for 5-7 minutes.
- Stir in black beans, brown rice, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper; bring to a boil.
- Reduce heat and simmer for about 30-35 minutes, or until rice is cooked.
- Remove from heat and sprinkle Monterey Jack cheese on top; cover until the cheese melts.
- Serve warm, enjoying the hearty and creamy dish.
Notes
Best eaten fresh the same day, but can be stored in the fridge for up to 3 days. Not recommended for freezing.
