Description

A hearty and flavorful vegetarian dish made with black beans, brown rice, and melted Monterey Jack cheese, perfect for meal prep.


Ingredients

  • 1 cup black beans, canned or cooked
  • 1 cup brown rice
  • 1 can diced tomatoes
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup Monterey Jack cheese, shredded

Instructions

  1. In a large pot, heat some oil over medium heat until it sizzles.
  2. Add chopped onion and bell pepper; sauté until soft and translucent for 5-7 minutes.
  3. Stir in black beans, brown rice, diced tomatoes, vegetable broth, cumin, chili powder, salt, and pepper; bring to a boil.
  4. Reduce heat and simmer for about 30-35 minutes, or until rice is cooked.
  5. Remove from heat and sprinkle Monterey Jack cheese on top; cover until the cheese melts.
  6. Serve warm, enjoying the hearty and creamy dish.

Notes

Best eaten fresh the same day, but can be stored in the fridge for up to 3 days. Not recommended for freezing.
