Description

A quick and satisfying one-pan meal that blends the flavors of tacos and mac and cheese.


Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 2 cups elbow macaroni
  • 4 cups beef or chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes (optional)
  • Salt and pepper to taste
  • Chopped green onions (for garnish, optional)

Instructions

  1. Cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Stir in the taco seasoning and cook for another minute.
  3. Add the elbow macaroni and broth to the skillet, bring to a boil, then reduce heat and cover.
  4. Cook for about 10-12 minutes or until the pasta is al dente.
  5. Stir in the shredded cheese until melted, and add diced tomatoes if using.
  6. Season with salt and pepper to taste and serve hot, garnished with chopped green onions if desired.

Notes

Ensure not to overcook the pasta for a perfect texture. Adding a splash of broth when reheating can help revive creaminess.
