Description

A creamy, delicious macaroni dish made in one pot with vegetables and cheese, perfect for a quick meal.


Ingredients

  • 8 oz elbow macaroni
  • 2 cups vegetable broth
  • 1 cup milk
  • 1 cup mixed vegetables (such as broccoli, bell peppers, and peas)
  • 1 tablespoon butter
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Combine the elbow macaroni, vegetable broth, and milk in a large pot.
  2. Bring to a boil, listening for the bubbling liquid.
  3. Reduce the heat and simmer for about 8-10 minutes, stirring occasionally until the pasta is al dente.
  4. Add the mixed vegetables and cook for another 5 minutes until heated through.
  5. Stir in the shredded cheese and butter until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy!

Notes

Best eaten fresh, but can be reheated in the microwave with a splash of broth.
