- 8 oz elbow macaroni
- 2 cups vegetable broth
- 1 cup milk
- 1 cup mixed vegetables (such as broccoli, bell peppers, and peas)
- 1 tablespoon butter
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
Instructions
- Combine the elbow macaroni, vegetable broth, and milk in a large pot.
- Bring to a boil, listening for the bubbling liquid.
- Reduce the heat and simmer for about 8-10 minutes, stirring occasionally until the pasta is al dente.
- Add the mixed vegetables and cook for another 5 minutes until heated through.
- Stir in the shredded cheese and butter until melted and creamy.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
Best eaten fresh, but can be reheated in the microwave with a splash of broth.
