Description

A rich and comforting chicken gnocchi soup made creamy with half-and-half and packed with vegetables, perfect for chilly evenings.


Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon regular olive oil
  • 1 cup chopped yellow onion
  • 3/4 cup shredded carrots
  • 1/2 cup thinly sliced or small-diced celery
  • 2 large garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken stock or broth
  • 2 cups half-and-half, warmed
  • 1 to 2 teaspoons chopped fresh thyme leaves
  • 1/2 teaspoon dried Italian seasoning
  • 1 pound potato gnocchi
  • 1/2 to 3/4 cup grated Parmigiano Reggiano
  • 2 cups cooked chicken breast, shredded or cubed
  • 2 cups baby spinach leaves
  • 1/8 teaspoon grated nutmeg (optional)
  • Diamond Crystal kosher salt and freshly ground black pepper

Instructions

  1. Heat butter and olive oil in a large, heavy-bottomed pot over medium-high heat until foaming subsides.
  2. Add onion, carrots, and celery with salt and pepper. Sauté until softened and just starting to brown.
  3. Add garlic and cook for about 1 minute until fragrant.
  4. Deglaze the pot with white wine, scraping any brown bits from the bottom with a wooden spoon.
  5. Simmer until almost all the liquid is evaporated, about 2-3 minutes.
  6. Stir in flour and cook for 1-2 minutes.
  7. Gradually whisk in chicken stock and simmer until slightly thickened.
  8. Whisk in warmed half-and-half, thyme, and Italian seasoning.
  9. Add gnocchi and simmer for 3-5 minutes until tender and cooked through.
  10. Stir in parmesan, shredded chicken, and spinach leaves.
  11. Simmer for 2-3 minutes more until chicken is hot and spinach is wilted.
  12. Season to taste with nutmeg (if using), salt, and pepper.

Notes

Best eaten fresh the same day; reheats on the stove with a splash of broth if needed.
