Description

A quick and flavorful taco-inspired pasta dish that brings together ground beef, pasta, and cheese in a delicious one-pot meal.


Ingredients

  • 8 ounces pasta (penne or rotini)
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (frozen or canned)
  • 1/2 cup chopped bell peppers
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Cook the ground beef or turkey over medium heat until browned, about 5-6 minutes.
  2. Add the diced tomatoes, chicken broth, taco seasoning, corn, and bell peppers, and bring to a boil.
  3. Stir in the pasta and reduce heat to a simmer. Cover and cook for about 10-12 minutes, until the pasta is tender.
  4. Remove from heat and stir in the shredded cheese until melted.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions.

Notes

Best eaten fresh the same day, but reheats in a skillet with a splash of broth if needed.
