- 8 ounces pasta (penne or rotini)
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 ounces) diced tomatoes
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup corn (frozen or canned)
- 1/2 cup chopped bell peppers
- Salt and pepper to taste
- Chopped green onions (for garnish)
Instructions
- Cook the ground beef or turkey over medium heat until browned, about 5-6 minutes.
- Add the diced tomatoes, chicken broth, taco seasoning, corn, and bell peppers, and bring to a boil.
- Stir in the pasta and reduce heat to a simmer. Cover and cook for about 10-12 minutes, until the pasta is tender.
- Remove from heat and stir in the shredded cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Best eaten fresh the same day, but reheats in a skillet with a splash of broth if needed.
