Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchinis, chopped
- 2 bell peppers, diced
- 2 cups diced tomatoes (canned or fresh)
- 1 cup vegetable broth
- 1 cup corn kernels (fresh or frozen)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened.
- Add the chopped zucchinis and diced bell peppers. Cook for about 5 minutes.
- Stir in the diced tomatoes, vegetable broth, corn, oregano, and basil. Bring to a simmer.
- Reduce the heat and let it cook for about 20 minutes, stirring occasionally. Add salt and pepper to taste.
- Garnish with fresh parsley before serving.
