- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups small pasta (like shells or elbows)
- 2 cups fresh spinach
- Salt and pepper, to taste
Instructions
- Brown the sausage: In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned and crumbled, about 5-7 minutes.
- Sauté the vegetables: Stir in chopped onions, carrots, and celery. Sauté until softened, around 5 minutes.
- Add garlic: Mix in the minced garlic and cook until fragrant, about 1 minute.
- Pour in liquid: Add the broth and diced tomatoes, scraping the bottom of the pot to lift any brown bits.
- Incorporate the pasta: Bring the mixture to a boil, then add your pasta. Cook according to package directions, around 8-10 minutes, until al dente.
- Mix in spinach: A few minutes before the pasta is ready, stir in the fresh spinach until wilted.
Notes
For a vegetarian option, substitute sausage with mushrooms. Feel free to adjust seasonings to taste.
