Ingredients

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups small pasta (like shells or elbows)
  • 2 cups fresh spinach
  • Salt and pepper, to taste

Instructions

  1. Brown the sausage: In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned and crumbled, about 5-7 minutes.
  2. Sauté the vegetables: Stir in chopped onions, carrots, and celery. Sauté until softened, around 5 minutes.
  3. Add garlic: Mix in the minced garlic and cook until fragrant, about 1 minute.
  4. Pour in liquid: Add the broth and diced tomatoes, scraping the bottom of the pot to lift any brown bits.
  5. Incorporate the pasta: Bring the mixture to a boil, then add your pasta. Cook according to package directions, around 8-10 minutes, until al dente.
  6. Mix in spinach: A few minutes before the pasta is ready, stir in the fresh spinach until wilted.

Notes

For a vegetarian option, substitute sausage with mushrooms. Feel free to adjust seasonings to taste.
