Description

A quick and flavorful Cajun-inspired dish featuring orzo pasta, chicken, and vibrant vegetables, perfect for busy weeknights.


Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 cup cooked chicken or sausage, chopped
  • 1 cup corn
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil over medium heat until it shimmers.
  2. Add onion, garlic, and bell pepper; sauté until softened, around 5 minutes.
  3. Stir in the cooked chicken or sausage and cook for another 2 minutes.
  4. Add orzo pasta, corn, Cajun seasoning, and chicken broth.
  5. Bring to a boil, then reduce the heat to low and simmer, covered, for about 15 minutes, or until the orzo is tender.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

Notes

Best eaten fresh the same day. Reheat in the microwave with a splash of broth if necessary.
