- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup cooked chicken or sausage, chopped
- 1 cup corn
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil over medium heat until it shimmers.
- Add onion, garlic, and bell pepper; sauté until softened, around 5 minutes.
- Stir in the cooked chicken or sausage and cook for another 2 minutes.
- Add orzo pasta, corn, Cajun seasoning, and chicken broth.
- Bring to a boil, then reduce the heat to low and simmer, covered, for about 15 minutes, or until the orzo is tender.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Best eaten fresh the same day. Reheat in the microwave with a splash of broth if necessary.
