One-Pan Monterey Chicken Pasta

Description

A quick and delicious one-pan meal featuring chicken, pasta, and melted cheese, perfect for busy weeknights.


Ingredients

  • 8 ounces of penne pasta
  • 1 pound of chicken breasts
  • 1 tablespoon of olive oil
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 cup of chicken broth
  • 1 cup of shredded Monterey Jack cheese
  • 1 cup of broccoli florets
  • 1 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes.
  3. Remove chicken and set aside.
  4. Add the pasta, diced tomatoes, chicken broth, garlic powder, Italian seasoning, and broccoli to the same skillet.
  5. Stir until combined and bring to a boil.
  6. Reduce to a simmer and cover. Cook until pasta is al dente and broccoli is tender, about 10-12 minutes.
  7. Return the chicken to the skillet and mix well.
  8. Sprinkle the cheese on top and cover until melted, about 2-3 minutes.
  9. Serve warm and enjoy!

Notes

Best eaten fresh the same day. Reheat in the microwave with a splash of broth if needed.
