A quick and delicious one-pan meal featuring chicken, pasta, and melted cheese, perfect for busy weeknights.
Ingredients

- 8 ounces of penne pasta
- 1 pound of chicken breasts
- 1 tablespoon of olive oil
- 1 can (14.5 ounces) of diced tomatoes
- 1 cup of chicken broth
- 1 cup of shredded Monterey Jack cheese
- 1 cup of broccoli florets
- 1 teaspoon of garlic powder
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes.
- Remove chicken and set aside.
- Add the pasta, diced tomatoes, chicken broth, garlic powder, Italian seasoning, and broccoli to the same skillet.
- Stir until combined and bring to a boil.
- Reduce to a simmer and cover. Cook until pasta is al dente and broccoli is tender, about 10-12 minutes.
- Return the chicken to the skillet and mix well.
- Sprinkle the cheese on top and cover until melted, about 2-3 minutes.
- Serve warm and enjoy!
Notes
Best eaten fresh the same day. Reheat in the microwave with a splash of broth if needed.
