Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried thyme
  • 8 ounces uncooked pasta (like fusilli or penne)
  • 1 cup shredded cheese (Gruyere or Swiss)
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Melt the butter and olive oil in a large pot over medium heat.
  2. Add the sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
  3. Include the minced garlic and cook for an additional minute.
  4. Pour in the broth and add the thyme, bringing the mixture to a boil.
  5. Add the uncooked pasta and stir well to submerge it in the broth.
  6. Reduce the heat to low, cover the pot, and cook until the pasta is tender, about 10-12 minutes.
  7. Remove from heat and stir in the cheese until melted and creamy.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

Best eaten fresh the same day. If reheating, add a splash of broth to improve texture.
