Instructions
- Melt the butter and olive oil in a large pot over medium heat.
- Add the sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
- Include the minced garlic and cook for an additional minute.
- Pour in the broth and add the thyme, bringing the mixture to a boil.
- Add the uncooked pasta and stir well to submerge it in the broth.
- Reduce the heat to low, cover the pot, and cook until the pasta is tender, about 10-12 minutes.
- Remove from heat and stir in the cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.

Best eaten fresh the same day. If reheating, add a splash of broth to improve texture.
