Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup wild rice
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Stir in the garlic powder and cook for another minute.
  4. Add the chicken, wild rice, and chicken broth. Bring to a boil.
  5. Reduce the heat, cover, and simmer for 45 minutes or until the rice is tender.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Let it simmer for an additional 10 minutes.
  8. Serve hot, garnished with fresh parsley.
