Description

A comforting one-pot meal where ground beef browns with vegetables, and pasta cooks directly in a rich broth with beans and tomatoes.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup ditalini pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions, carrots, and celery; sauté until soft and fragrant.
  3. Stir in minced garlic and ground beef, cooking until browned and no longer pink.
  4. Add diced tomatoes, cannellini beans, beef broth, Italian seasoning, salt, and pepper, ensuring it’s well combined.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes.
  6. Add ditalini pasta and cook until al dente, about 10 minutes.
  7. Adjust seasoning as needed and serve hot, garnished with fresh herbs if desired.

Notes

Can substitute ground beef with Italian sausage or ditalini pasta with small elbow macaroni.
