- 1 lb ground beef
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup ditalini pasta
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onions, carrots, and celery; sauté until soft and fragrant.
- Stir in minced garlic and ground beef, cooking until browned and no longer pink.
- Add diced tomatoes, cannellini beans, beef broth, Italian seasoning, salt, and pepper, ensuring it’s well combined.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20-30 minutes.
- Add ditalini pasta and cook until al dente, about 10 minutes.
- Adjust seasoning as needed and serve hot, garnished with fresh herbs if desired.
Notes
Can substitute ground beef with Italian sausage or ditalini pasta with small elbow macaroni.
