- 1 cup black beans, cooked
- 1 cup rice
- 1 lb sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Olive oil — for sautéing
Instructions
- Heat olive oil in a large pot over medium heat until it shimmers.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the sausage and cook until browned, about 5-7 minutes.
- Add the garlic and bell pepper, cooking for another 2-3 minutes until softened.
- Stir in the black beans, rice, cumin, smoked paprika, salt, and pepper until mixed.
- Pour in the broth and bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes or until rice is tender.
- Fluff with a fork and serve hot.
Notes
