Description

A simple stovetop dish combining black beans, rice, and sausage for a satisfying meal perfect for weeknight dinners.


Ingredients

  • 1 cup black beans, cooked
  • 1 cup rice
  • 1 lb sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Olive oil — for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat until it shimmers.
  2. Add the chopped onion and cook until translucent, about 3-4 minutes.
  3. Stir in the sausage and cook until browned, about 5-7 minutes.
  4. Add the garlic and bell pepper, cooking for another 2-3 minutes until softened.
  5. Stir in the black beans, rice, cumin, smoked paprika, salt, and pepper until mixed.
  6. Pour in the broth and bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes or until rice is tender.
  8. Fluff with a fork and serve hot.

Notes
