- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup bell peppers, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and season with Cajun seasoning. Cook until browned.
- Add chopped onion, bell peppers, and garlic. Sauté until vegetables are soft and fragrant.
- Stir in orzo and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 10 minutes, stirring occasionally, until orzo is tender and absorbs the broth.
- Stir in heavy cream and Parmesan cheese. Cook until the sauce thickens slightly and is creamy.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and serve.
