A hearty and flavorful dish combining red beans, smoked sausage, and Cajun spices, slow-cooked to perfection and served over rice.

- 1 lb dried red beans
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 smoked sausage or andouille sausage, sliced
- 4 cups chicken broth
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Cooked rice for serving
- Green onions for garnish
Instructions
- Rinse and soak the red beans overnight, or for at least 4 hours. They should be plump and hydrated.
- Add the soaked beans, onion, celery, bell pepper, garlic, sausage, and Cajun seasoning to the slow cooker.
- Pour in the chicken broth and stir to combine.
- Cook on low for 6-8 hours or until the beans are tender.
- Season with salt and pepper to taste before serving.
- Serve over cooked rice and garnish with green onions.
Notes
For best results, soak the beans for a full 8 hours and brown the sausage before adding to the crockpot. Gets better overnight; reheats with a splash of broth.
