Description

A hearty and flavorful dish combining red beans, smoked sausage, and Cajun spices, slow-cooked to perfection and served over rice.


Ingredients

  • 1 lb dried red beans
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 smoked sausage or andouille sausage, sliced
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice for serving
  • Green onions for garnish

Instructions

  1. Rinse and soak the red beans overnight, or for at least 4 hours. They should be plump and hydrated.
  2. Add the soaked beans, onion, celery, bell pepper, garlic, sausage, and Cajun seasoning to the slow cooker.
  3. Pour in the chicken broth and stir to combine.
  4. Cook on low for 6-8 hours or until the beans are tender.
  5. Season with salt and pepper to taste before serving.
  6. Serve over cooked rice and garnish with green onions.

Notes

For best results, soak the beans for a full 8 hours and brown the sausage before adding to the crockpot. Gets better overnight; reheats with a splash of broth.
