Cheesy Hamburger Potato Casserole

A comforting baked dish that combines layers of ground beef, potatoes, and cheese, perfect for busy weeknights.

  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 56 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional, for extra meltiness)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat oven: Heat to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.
  2. Cook beef mixture: In a skillet, brown ground beef with onion until fully cooked, about 5–7 minutes. Drain excess fat. Stir in garlic, salt, pepper, and paprika. Cook for another minute until fragrant.
  3. Make sauce: In a bowl, whisk together cream of mushroom soup and milk until smooth.
  4. Assemble casserole: Layer half the sliced potatoes on the bottom of the baking dish, slightly overlapping them for even cooking.
  5. Spread beef mixture: Distribute half the beef mixture over the potatoes evenly.
  6. Pour sauce: Pour half the sauce over the beef layer, ensuring even coverage, and sprinkle with 1 cup of cheddar cheese.
  7. Repeat layers: Add the remaining sliced potatoes on top, followed by the rest of the beef mixture, sauce, and finish with the remaining cheddar and mozzarella for extra meltiness.
  8. Bake covered: Cover with foil and bake for 45 minutes.
  9. Bake uncovered: Remove the foil and bake for an additional 15–20 minutes until the potatoes are tender and the cheese is bubbly and golden.
  10. Serve: Let rest for 5 minutes before serving.
