One Pot Cheesy Sausage Pasta

A creamy, cheesy pasta dish blended with savory Italian sausage, perfect for busy weeknights.

  • 8 ounces pasta (penne or rotini)
  • 1 pound Italian sausage (sweet or spicy)
  • 1 cup heavy cream
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and garlic, sauté until softened, about 2-3 minutes, until the onion turns glossy.
  2. Add the Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes.
  3. Stir in the chicken broth and bring to a boil.
  4. Add the pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally.
  5. Reduce heat to low; stir in the heavy cream and cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

Leftover flavors develop overnight, making it a great option for the following day’s lunch or dinner. Serve with a side salad or garlic bread.
