This Chicken Burrito Casserole combines shredded chicken, black beans, and cheese in a quick, hearty dish perfect for busy weeknights.

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 1 teaspoon taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine shredded chicken, black beans, corn, salsa, cooked rice, taco seasoning, and half of the cheese in a large bowl.
- Spread the mixture in a greased 9×13 inch casserole dish.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a few minutes before serving.
Notes
Watch baking time closely to avoid overcooking the cheese. Rotisserie chicken can be used as a substitute for shredded chicken.
