Description

A hearty and comforting creamy chicken and rice dish made effortlessly in the Instant Pot.


Ingredients

  • 2 cups rice
  • 1 lb chicken breast, cut into pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup frozen peas
  • 1 tablespoon olive oil

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode and heat the olive oil until it shimmers and is ready.
  2. Add the diced onion and minced garlic; cook until the onion is translucent and fragrant.
  3. Stir in the chicken pieces along with salt, pepper, and paprika; cook until browned on all sides.
  4. Next, stir in the rice along with 4 cups of chicken broth. Close the lid securely and set the Instant Pot to ‘Pressure Cook’ for 10 minutes.
  5. Once the cooking time is complete, let the pressure release naturally for 10 minutes before doing a quick release of any remaining pressure.
  6. Open the lid and stir in the heavy cream and frozen peas; the sauce will thicken and turn creamy.
  7. Serve warm and enjoy your creamy chicken and rice!

Notes

For a lighter dish, substitute half the heavy cream with Greek yogurt.
