A hearty and comforting creamy chicken and rice dish made effortlessly in the Instant Pot.
Ingredients

- 2 cups rice
- 1 lb chicken breast, cut into pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup frozen peas
- 1 tablespoon olive oil
Instructions
- Set the Instant Pot to ‘Sauté’ mode and heat the olive oil until it shimmers and is ready.
- Add the diced onion and minced garlic; cook until the onion is translucent and fragrant.
- Stir in the chicken pieces along with salt, pepper, and paprika; cook until browned on all sides.
- Next, stir in the rice along with 4 cups of chicken broth. Close the lid securely and set the Instant Pot to ‘Pressure Cook’ for 10 minutes.
- Once the cooking time is complete, let the pressure release naturally for 10 minutes before doing a quick release of any remaining pressure.
- Open the lid and stir in the heavy cream and frozen peas; the sauce will thicken and turn creamy.
- Serve warm and enjoy your creamy chicken and rice!
Notes
For a lighter dish, substitute half the heavy cream with Greek yogurt.
