Creamy Gnocchi with Spinach and Feta

A quick and satisfying stovetop dish featuring soft gnocchi, wilted spinach, and creamy feta.

  • 1 package of gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the fresh spinach and cook until wilted.
  4. Reduce heat, and pour in the heavy cream, stirring to combine.
  5. Add the cooked gnocchi and crumbled feta cheese to the skillet, mixing gently until heated through and well combined.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with Parmesan cheese if desired.

Notes

For longer storage, freeze the dish for up to one month. Reheat in a skillet over low heat, adding a splash of cream or water to loosen the sauce.
