One-Pot Creamy Mushroom Chicken

Description

A delectable stovetop dish featuring tender chicken in a rich and creamy mushroom sauce, perfect for busy weeknights.


Ingredients

  • 1.2 lb chicken breasts, skinless and boneless (sliced horizontally)
  • 1/4 teaspoon salt
  • Black pepper, freshly coarsely ground to taste
  • 1 tablespoon flour
  • 2 tablespoons olive oil (for chicken)
  • 1 tablespoon olive oil (for mushrooms)
  • 8 oz mushrooms, sliced (cremini recommended)
  • 1 cup heavy cream
  • 5 cloves garlic, minced
  • 4 tablespoons fresh thyme, snipped

Instructions

  1. Prepare the chicken by seasoning it with salt and pepper and dredging it in flour.
  2. Heat 2 tablespoons of olive oil in a high-sided skillet and cook the chicken until golden brown and cooked through, about 5-7 minutes per side.
  3. Remove the chicken from the skillet and keep it warm.
  4. Add 1 tablespoon of olive oil and sliced mushrooms to the same skillet. Cook for about 5 minutes until they release their juices and begin to brown.
  5. Pour in heavy cream and minced garlic, allowing it to simmer and thicken for about 3-4 minutes. Stir in half of the snipped thyme.
  6. Return the chicken to the skillet for a minute to reheat, coating it in the creamy sauce.
  7. Serve plated, topped with reserved mushrooms and the remaining thyme.

Notes

For the best results, use high-quality fresh cremini mushrooms.
