- 1.2 lb chicken breasts, skinless and boneless (sliced horizontally)
- 1/4 teaspoon salt
- Black pepper, freshly coarsely ground to taste
- 1 tablespoon flour
- 2 tablespoons olive oil (for chicken)
- 1 tablespoon olive oil (for mushrooms)
- 8 oz mushrooms, sliced (cremini recommended)
- 1 cup heavy cream
- 5 cloves garlic, minced
- 4 tablespoons fresh thyme, snipped
Instructions
- Prepare the chicken by seasoning it with salt and pepper and dredging it in flour.
- Heat 2 tablespoons of olive oil in a high-sided skillet and cook the chicken until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and keep it warm.
- Add 1 tablespoon of olive oil and sliced mushrooms to the same skillet. Cook for about 5 minutes until they release their juices and begin to brown.
- Pour in heavy cream and minced garlic, allowing it to simmer and thicken for about 3-4 minutes. Stir in half of the snipped thyme.
- Return the chicken to the skillet for a minute to reheat, coating it in the creamy sauce.
- Serve plated, topped with reserved mushrooms and the remaining thyme.
Notes
For the best results, use high-quality fresh cremini mushrooms.
