Description
A creamy and flavorful pasta dish made in one pot with smoked kielbasa, perfect for busy weeknights.

- 1 tbsp olive oil
- 1 lb smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
- 1.5 cups diced onion
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 (10 oz) can diced tomatoes
- 8 oz dry pasta (small pasta)
- 1/2 cup milk or heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup shredded Cheddar cheese
- 1/3 cup thinly sliced scallions (for garnish)
Instructions
- Add olive oil to a 4-5 quart sauté pan over medium-high heat. The oil should shimmer but not smoke.
- Fry the smoked kielbasa and onions until the onions start to soften and the kielbasa begins to brown.
- Add garlic and cook until fragrant, about 30 seconds, taking care not to let it burn.
- Pour in the chicken broth, diced tomatoes, milk or cream, and add the pasta. Stir gently to combine.
- Simmer for 15 minutes, or until the pasta is tender while ensuring it doesn’t dry out; add more broth if needed.
- Remove the skillet from heat and stir in 1/2 cup of cheese until melted and smooth.
- Top with the remaining cheese and cover until melted, spotty brown, and bubbly.
- Sprinkle with sliced scallions and serve hot.
Notes
For a lighter meal, substitute half the cream with broth. Try different cheeses for unique flavors.
