A quick and rich one-pot dish featuring tender chicken, creamy sauce, and vibrant spinach, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning, ensuring even flavor.
  2. Set the Instant Pot to ‘Sauté’ mode and add a little oil. Brown the chicken on each side for about 3-4 minutes, until golden, then remove it and set aside.
  3. Add the sun-dried tomatoes to the pot and sauté for 1-2 minutes to release their flavor.
  4. Pour in the chicken broth, scraping any brown bits from the bottom of the pot for added richness.
  5. Add the pasta, heavy cream, and then place the chicken on top.
  6. Close the lid, set the valve to sealing, and cook on manual high pressure for 8 minutes.
  7. When the time is up, perform a quick release and stir in the spinach until wilted.
  8. Serve topped with grated Parmesan cheese for an extra touch.

Notes

Ensure the Instant Pot is functioning well and check the sealing ring. Brown the chicken well for the best flavor.
