- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup banana pepper rings
- 1 cup heavy cream or Greek yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat until it shimmers.
- Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and banana pepper rings, sauté for another 2-3 minutes until the garlic is fragrant and the peppers soften.
- Reduce the heat and stir in the heavy cream or Greek yogurt, cooking until the sauce thickens, about 3-5 minutes.
- Serve hot, garnished with fresh parsley if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months, but texture may change upon reheating.
