A quick and flavorful Tomato Spinach Chicken Spaghetti dish perfect for busy weeknights, featuring al dente spaghetti and fresh ingredients.

Ingredients

Scale
  • 200g spaghetti
  • 200g chicken breast, sliced
  • 1 cup spinach, fresh
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the spaghetti according to the package instructions in a pot of salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the sliced chicken breast to the skillet, seasoning it with salt and pepper. Cook for approximately 5-7 minutes until golden and fully cooked.
  4. Toss in the halved cherry tomatoes and cook until they soften and start to burst, about 3-4 minutes.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Combine the cooked spaghetti with the chicken and veggies in the skillet, mixing well to combine all the flavors.
  7. Serve hot, garnished with freshly grated Parmesan cheese.

Notes
