Description

A quick and satisfying one-pan meal with tender chicken thighs, creamy sauce, and gnocchi, perfect for weeknight dinners.


Ingredients

  • 4 Boneless, skinless chicken thighs
  • 16 oz Fresh or store-bought gnocchi
  • 4 cups Fresh spinach
  • 1 large Onion, diced
  • 8 oz Mushrooms, sliced
  • 1 cup Heavy cream
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add diced onions and garlic; sauté until translucent and fragrant, about 3-4 minutes.
  3. Add chicken thighs, season with salt and pepper, and cook until browned, about 5-7 minutes per side.
  4. Stir in sliced mushrooms and cook for a few minutes until softened.
  5. Add gnocchi and cream, stirring to combine.
  6. Toss in fresh spinach and cook until wilted, about 2-3 minutes.
  7. Simmer until gnocchi is cooked and sauce thickens, about 5-7 minutes.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

Start with room-temperature chicken thighs for even cooking. Avoid overcrowding the skillet to prevent steaming.
