- 4 Boneless, skinless chicken thighs
- 16 oz Fresh or store-bought gnocchi
- 4 cups Fresh spinach
- 1 large Onion, diced
- 8 oz Mushrooms, sliced
- 1 cup Heavy cream
- 3 cloves Garlic, minced
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat until shimmering.
- Add diced onions and garlic; sauté until translucent and fragrant, about 3-4 minutes.
- Add chicken thighs, season with salt and pepper, and cook until browned, about 5-7 minutes per side.
- Stir in sliced mushrooms and cook for a few minutes until softened.
- Add gnocchi and cream, stirring to combine.
- Toss in fresh spinach and cook until wilted, about 2-3 minutes.
- Simmer until gnocchi is cooked and sauce thickens, about 5-7 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
Start with room-temperature chicken thighs for even cooking. Avoid overcrowding the skillet to prevent steaming.
