Description

A weeknight staple that combines tender chicken with fresh, tangy cherry tomatoes, and basil for a satisfying pasta dish.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups pasta (such as penne or rotini)
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, and cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  2. Add minced garlic to the same skillet and sauté for 1 minute until fragrant.
  3. Include cherry tomatoes, cooking until they begin to soften, about 3-4 minutes.
  4. Toss in the cooked pasta and sliced chicken back into the skillet along with chopped basil. Season to taste.
  5. Serve warm topped with Parmesan cheese.

Notes

Prioritize even cooking for chicken to avoid dryness. Let cooked pasta sit for a minute before adding it back to the skillet to absorb flavors.
