Description
A weeknight staple that combines tender chicken with fresh, tangy cherry tomatoes, and basil for a satisfying pasta dish.
Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 2 cups pasta (such as penne or rotini)
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, and cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
- Add minced garlic to the same skillet and sauté for 1 minute until fragrant.
- Include cherry tomatoes, cooking until they begin to soften, about 3-4 minutes.
- Toss in the cooked pasta and sliced chicken back into the skillet along with chopped basil. Season to taste.
- Serve warm topped with Parmesan cheese.
Notes
Prioritize even cooking for chicken to avoid dryness. Let cooked pasta sit for a minute before adding it back to the skillet to absorb flavors.
