A creamy, spiced chicken and tender orzo dish that’s perfect for weeknight dinners.

- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Once hot, add the diced chicken breast and cook until browned, about 5-7 minutes.
- Remove the chicken from the pot and set aside.
- Add the onion, bell pepper, and garlic; sauté until soft and fragrant, about 3-4 minutes.
- Stir in the Cajun seasoning and cook for an additional minute.
- Add the orzo and chicken broth, then return the chicken to the pot. Bring to a boil.
- Reduce heat and let it simmer until the orzo is cooked, about 10-12 minutes, stirring occasionally.
- Stir in the heavy cream, and season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
For added spice, consider incorporating hot sauce during cooking.
