Cajun Chicken Orzo

Description

A creamy, spiced chicken and tender orzo dish that’s perfect for weeknight dinners.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once hot, add the diced chicken breast and cook until browned, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
  3. Add the onion, bell pepper, and garlic; sauté until soft and fragrant, about 3-4 minutes.
  4. Stir in the Cajun seasoning and cook for an additional minute.
  5. Add the orzo and chicken broth, then return the chicken to the pot. Bring to a boil.
  6. Reduce heat and let it simmer until the orzo is cooked, about 10-12 minutes, stirring occasionally.
  7. Stir in the heavy cream, and season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley.

Notes

For added spice, consider incorporating hot sauce during cooking.
