Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 8 oz pasta (e.g., rotini or penne)
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed frozen vegetables (peas, carrots, corn)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. In a slow cooker, combine the cooked and shredded chicken, cream of chicken soup, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  2. Add the uncooked pasta to the slow cooker and gently stir to combine; the pasta should be submerged in the liquid.
  3. Cover and cook on low for 240-360 minutes or on high for 120-180 minutes, until the pasta is cooked and the vegetables are tender.
  4. If desired, stir in shredded cheddar cheese just before serving until melted, which adds an extra layer of creaminess.
  5. Garnish with fresh parsley if desired and serve warm.

Notes

Taking the time to properly shred the chicken and gently stir the pasta will enhance flavor and texture. Consider using whole wheat pasta with adjusted cooking times for a healthier option.
