Description
A hearty and flavorful slow-cooked dish featuring red beans, smoked sausage, and aromatic vegetables, served over rice.
Ingredients

- 1 pound dried red beans
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 celery stalk, chopped
- 3 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 1 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon oregano
- 2 bay leaves
- 4 cups chicken broth
- Salt and pepper to taste
- Cooked white rice, for serving
- Chopped green onions, for garnish
Instructions
- Soak the beans overnight in water.
- Drain and rinse the beans.
- Combine the soaked beans, onion, bell pepper, celery, garlic, sausage, cayenne pepper, thyme, oregano, bay leaves, chicken broth, salt, and pepper in a Crock-Pot.
- Cover and cook on low for 6 to 8 hours until beans are tender.
- Serve over cooked white rice with chopped green onions for garnish.
Notes
Mash a few beans to thicken the broth. Ensure beans are covered with at least 2 inches of water when soaking. Best eaten fresh but reheats well with broth.
