Description

A hearty and flavorful slow-cooked dish featuring red beans, smoked sausage, and aromatic vegetables, served over rice.


Ingredients

  • 1 pound dried red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 celery stalk, chopped
  • 3 cloves garlic, minced
  • 1 pound smoked sausage, sliced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 2 bay leaves
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Cooked white rice, for serving
  • Chopped green onions, for garnish

Instructions

  1. Soak the beans overnight in water.
  2. Drain and rinse the beans.
  3. Combine the soaked beans, onion, bell pepper, celery, garlic, sausage, cayenne pepper, thyme, oregano, bay leaves, chicken broth, salt, and pepper in a Crock-Pot.
  4. Cover and cook on low for 6 to 8 hours until beans are tender.
  5. Serve over cooked white rice with chopped green onions for garnish.

Notes

Mash a few beans to thicken the broth. Ensure beans are covered with at least 2 inches of water when soaking. Best eaten fresh but reheats well with broth.
