Skillet Dirty Rice & Beans

Description

A hearty skillet dish made with smoked beef sausage, rice, and kidney beans, packed with flavors from Cajun and Creole seasoning.


Ingredients

  • 1 pound Smoked Beef Sausage, sliced
  • 1 cup Rice
  • 1 can (14.5 oz) diced Tomatoes
  • 1 can (15 oz) Kidney Beans, rinsed and drained
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken or Vegetable Broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Creole seasoning
  • Salt and Pepper to taste
  • Oil for cooking

Instructions

  1. Heat some oil in a large skillet over medium heat until shimmering.
  2. Add the sliced Smoked Beef Sausage and cook until browned, about 4-5 minutes.
  3. Add the chopped Onion and minced Garlic, stirring until the onion becomes translucent, about 3-4 minutes.
  4. Stir in the Rice, diced Tomatoes, Kidney Beans, Cajun seasoning, Creole seasoning, and Chicken or Vegetable Broth.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff with a fork and adjust seasoning with salt and pepper to taste before serving warm.

Notes

Best eaten fresh the same day; reheats in a 350°F oven with a splash of broth if needed.
