Ingredients

- 2 cups of rice
- 1 can of black beans, drained and rinsed
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 2 cups of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- Salt and pepper to taste
- Olive oil
Instructions
- Heat some olive oil in a large pot over medium heat.
- Add the chopped onion, bell pepper, and garlic; sauté until softened.
- Stir in the cumin and oregano, cooking for another minute.
- Add the rice to the pot, stirring to coat it in the oil and vegetables.
- Pour in the vegetable broth and bring to a boil.
- Add the black beans, salt, and pepper; stir to combine.
- Cover and reduce heat to low, simmer for about 20 minutes.
Notes
This dish is best eaten fresh. It reheats well on the stove with a splash of broth.
