Description

A simple, nourishing one pot chicken tortellini soup, perfect for weeknight dinners and meal prep.


Ingredients

  • 1 cup carrots (cut in pieces)
  • 1 tbsp oil
  • 1 lb chicken (breast or thighs, cut into pieces)
  • 32 oz chicken broth
  • 2 cups water
  • 1/3 cup dill (or parsley)
  • 1/2 cup green onions (chopped)
  • 8 oz cheese tortellini
  • 1 tsp salt (adjust to taste)
  • 1 tsp ground black pepper

Instructions

  1. Preheat a pot with oil over medium heat.
  2. Add chopped carrots and cook them until they are lightly softened.
  3. Add the chicken, water, and broth to the mix. Allow it to cook for 15 minutes.
  4. Stir in the green onions and dill, bringing it to a simmer.
  5. Add the tortellini and let it cook for 10 more minutes.
  6. Season with salt and pepper to taste before serving.

Notes

This soup can be stored in the refrigerator for up to 4 days and frozen for up to 3 months. Reheat on low heat, adding water if needed.
