Ingredients

- 1 cup carrots (cut in pieces)
- 1 tbsp oil
- 1 lb chicken (breast or thighs, cut into pieces)
- 32 oz chicken broth
- 2 cups water
- 1/3 cup dill (or parsley)
- 1/2 cup green onions (chopped)
- 8 oz cheese tortellini
- 1 tsp salt (adjust to taste)
- 1 tsp ground black pepper
Instructions
- Preheat a pot with oil over medium heat.
- Add chopped carrots and cook them until they are lightly softened.
- Add the chicken, water, and broth to the mix. Allow it to cook for 15 minutes.
- Stir in the green onions and dill, bringing it to a simmer.
- Add the tortellini and let it cook for 10 more minutes.
- Season with salt and pepper to taste before serving.
Notes
This soup can be stored in the refrigerator for up to 4 days and frozen for up to 3 months. Reheat on low heat, adding water if needed.
