Description

This One Pot Sausage Pasta is a quick and flavorful dish that limits cleanup and infuses each ingredient with rich taste, making it perfect for busy weeknights.


Ingredients

  • 12 ounces pasta (like penne or rigatoni)
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 3 cups chicken broth
  • 1 cup spinach, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once shimmering, add in the sausage and cook until browned, stirring occasionally for about 5-7 minutes.
  2. Add the chopped onion and cook until softened, roughly 3-4 minutes, then stir in the minced garlic for another minute until fragrant.
  3. Pour in the diced tomatoes, chicken broth, and pasta. Bring to a simmer and let it cook for about 10-12 minutes or until the pasta is al dente, stirring occasionally.
  4. Once the pasta is cooked, mix in the chopped spinach and season with salt and pepper to taste. Serve hot, topped with freshly grated Parmesan.

Notes

Make sure to brown the sausage well for full-bodied flavor. Substituting half the pasta with cauliflower can create a healthier option.
