Description

A flavorful and hearty dish made with rice, black beans, and diced tomatoes, infused with warm spices like cumin and paprika.


Ingredients

  • 1 cup rice
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions and garlic, and sauté until soft.
  3. Stir in the rice and cook for a few minutes until slightly toasted.
  4. Add vegetable broth, black beans, diced tomatoes, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

Best eaten fresh the same day; rice softens if it sits overnight. Reheat with a splash of broth.
