- 1 cup rice
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and garlic, and sauté until soft.
- Stir in the rice and cook for a few minutes until slightly toasted.
- Add vegetable broth, black beans, diced tomatoes, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
Best eaten fresh the same day; rice softens if it sits overnight. Reheat with a splash of broth.
