Description

A quick and easy one-pan hobo casserole loaded with ground beef, vegetables, and tater tots, perfect for busy weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups frozen mixed vegetables
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 package (about 1 lb) tater tots

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened.
  3. Stir in the frozen mixed vegetables, diced tomatoes, kidney beans, garlic powder, salt, and pepper. Cook for an additional 5 minutes until heated through.
  4. Transfer the beef mixture to a 9×13-inch baking dish, spreading it out evenly.
  5. Top with tater tots in an even layer.
  6. Bake in the preheated oven for 25 minutes until the tater tots are golden brown.
  7. Sprinkle shredded cheddar cheese on top and return to the oven for an additional 10-15 minutes until melted.
  8. Let cool slightly before serving.
