- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups frozen mixed vegetables
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 package (about 1 lb) tater tots
Instructions
- Preheat the oven to 375°F (190°C).
- Brown the ground beef in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened.
- Stir in the frozen mixed vegetables, diced tomatoes, kidney beans, garlic powder, salt, and pepper. Cook for an additional 5 minutes until heated through.
- Transfer the beef mixture to a 9×13-inch baking dish, spreading it out evenly.
- Top with tater tots in an even layer.
- Bake in the preheated oven for 25 minutes until the tater tots are golden brown.
- Sprinkle shredded cheddar cheese on top and return to the oven for an additional 10-15 minutes until melted.
- Let cool slightly before serving.

Ensure ground beef is well-browned for best flavor. Consider pre-thawing frozen vegetables to avoid excess moisture.
