- 4 cups chicken broth
- 2 cups fresh spinach
- 1 onion, chopped

Instructions
- Cook the Italian sausage in a large pot over medium heat until browned. Remove and set aside.
- Add the chopped onion and garlic to the same pot; sauté until softened, stirring gently until the edges begin to caramelize.
- Stir in the diced tomatoes, chicken broth, and Italian seasoning; bring to a boil.
- Add the orzo pasta and cook until tender, about 8-10 minutes.
- Return the sausage to the pot and stir in the fresh spinach until wilted.
- Season with salt and pepper to taste. Serve hot.

Avoid overcooking the pasta to maintain the desired texture and flavor. Best enjoyed fresh, but can be stored for up to 3 days in the fridge or 2 months in the freezer.
