- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat until shimmering.
- Season the chicken breasts with salt and pepper, then add to the hot pan.
- Cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the pan and set aside.
- Add minced garlic to the same pan and cook for 1 minute until fragrant.
- Pour in the balsamic vinegar and stir to combine; it will start to bubble.
- Add halved cherry tomatoes and the cooked chicken back to the pan, cooking for an additional 2-3 minutes.
- Sprinkle mozzarella cheese on top and cover the pan until cheese has melted.
- Garnish with fresh basil before serving.
Notes
Let the chicken rest for a couple of minutes after cooking to keep it juicy. Avoid overcrowding the pan to ensure a perfect golden crust.
