Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat until shimmering.
  2. Season the chicken breasts with salt and pepper, then add to the hot pan.
  3. Cook for about 5-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. Add minced garlic to the same pan and cook for 1 minute until fragrant.
  6. Pour in the balsamic vinegar and stir to combine; it will start to bubble.
  7. Add halved cherry tomatoes and the cooked chicken back to the pan, cooking for an additional 2-3 minutes.
  8. Sprinkle mozzarella cheese on top and cover the pan until cheese has melted.
  9. Garnish with fresh basil before serving.

Notes

Let the chicken rest for a couple of minutes after cooking to keep it juicy. Avoid overcrowding the pan to ensure a perfect golden crust.
