Ingredients

- 1 cup rice
- 2 cups vegetable broth or water
- 1 can black beans, rinsed and drained
- 1 cup kielbasa, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the onion, bell pepper, and garlic. Sauté until softened, about 4-5 minutes.
- Stir in the kielbasa and cook until browned, about 5 minutes.
- Add the rice, black beans, cumin, salt, and pepper; stir to combine.
- Pour in the vegetable broth or water; bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
- Fluff with a fork and serve warm.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in a 350F oven with a splash of broth.
