Description

A quick and hearty skillet dinner featuring rice, black beans, and savory kielbasa, perfect for weeknight meals.


Ingredients

  • 1 cup rice
  • 2 cups vegetable broth or water
  • 1 can black beans, rinsed and drained
  • 1 cup kielbasa, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the onion, bell pepper, and garlic. Sauté until softened, about 4-5 minutes.
  3. Stir in the kielbasa and cook until browned, about 5 minutes.
  4. Add the rice, black beans, cumin, salt, and pepper; stir to combine.
  5. Pour in the vegetable broth or water; bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  7. Fluff with a fork and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a 350F oven with a splash of broth.
